Sweet Cake
Servings: 6-8
Prep Time: 25 minutes
Though my kids could live on a S’more diet, the adults in our camping group were getting a little tired of this age-old desert. We adapted a sweet-cake recipe to campfire cooking and came up with a decadent treat that's great for grownups and kids too.
Ingredients:
Pound Cake
Sweetened condensed milk
2-tablespoons peanut butter (optional)
1-cup shredded coconut
1-cup mini chocolate chips
Directions:
1.) Pour the milk into a shallow bowl
2.) Mix the coconut and chocolate chips in a second bowl.
3.) Optional step, thoroughly mix two heaping teaspoons of peanut butter into the milk.
4.) Cut the pound cake into 1-inch cubes, and insert a cake cube on a roasting stick.
5.) Roll the cake cube in the condensed milk, covering it completely.
6.) Next roll the cake in the coconut/chocolate chip mixture, pressing the coconut into the cake if necessary to get it to stick.
7.) Roast the cake cube, as you would a marshmallow.
8.) The heat will caramelize the condensed milk, roast the coconut and melt the chocolate chips all at the same time.
