Mango Salsa
Instead of tomatoes use mangos; this is a delicious twist to Mexican staple.
| RECIPE INGREDIENTS: |

1 ripe mango |

2 tablespoons of minced cilantro leaves |
| |
1 teaspoon of olive oil |
| |
juice from 1 lemon |
| |
1/4 cup each of diced red and green bell pepper |
1. Peel and dice 1 ripe mango.
2. In a mixing bowl, combine the mango, 2 tablespoons of minced cilantro leaves, 1 teaspoon of olive oil, the juice from 1 lemon, and 1/4 cup each of diced red and green bell pepper. Makes 1 cup.
